Factors affecting household carbohydrate food consumption in Central Java: Before and during the COVID-19 pandemic

Abstract The COVID-19 pandemic has resulted in a change food demand. In Central Java, during the (2021), proportion of expenditure on grain group was higher than 2020; meanwhile, ready-to-eat decreased. This study aims to analyze pattern consumption carbohydrate sources, influencing factors, and elasticity households Java before pandemic. uses data from National Socio-Economic Survey (Susenas) for 12 districts/cities consisting 9,812 2019 10,636 samples 2021. Data analysis used Linear Approximation Almost Ideal Demand System (LA-AIDS) method.
